Cook like a pro:

Check the heat

Cook ground meat to an internal temperature of 160 Fahrenheit and steaks and roasts to an internal temp of 145 degrees Fahrenheit. Juices should run clear.

Don't overcook

Buffalo steaks should cook about one-third faster than a beef steak. This is because bison is a lean meat. Cook rare to medium to avoid dry meat or flavor loss.

Get Creative

Bison meat works well as burgers, kabobs, or chili and can even be used in a hotdish recipe. Go further and try cooking with the heart, tongue, or bone marrow.

In 2016, the American Bison, became the national mammal of the United States.
