Look for ears with brown, dried silk on the ends. Peel back the husk and look for plump kernels.
Store cobs in the refrigerator with the husk intact. Do not keep in a plastic bag or airtight container.
Eat corn as soon after picking as possible. As time passes flavor is lost as sugars convert to starch.
After baking, boiling, or grilling the corn, cut it off the cob to add to salads, hot dishes, and soups.
After cooking, drop the cobs in ice water to cool. Freeze full cobs or kernels in a bag. Enjoy for up to a year.
