As a source of vitamin C and flavor to dishes of all kinds, local onions are a must have! Onions are often grouped according to taste (mild and strong flavored), color (white, yellow, and red) and use (storage or freshly eaten). Store your onions in a cool, dark, well ventilated place to prevent mold for up to 6 or 7 months. Onions can also be preserved frozen! Before freezing your onions, follow the steps of washing, chopping, and blanching the (3 minutes), followed by  an ice water bath, sautéing in oil, and allowing them to rest until they are back to room temperature.
