Green onions or table onions are one of the first veggies to appear at farmers markets in the spring and last throughout the season. Onions are often grouped according to taste (mild and strong flavored), color (white, yellow, and red) and use (storage or freshly eaten). Store your onions in a cool, dark, well ventilated place to prevent mold for up to 6 or 7 months. Onions can also be preserved frozen! Wash, chop, and blanch the onions for 3 minutes then put them in an ice water bath, sauté them in oil, and bring them back to room temperature before freezing.
