When choosing Broccoli, look for sturdy, dark green spears, no yellowing and a high ratio of florets to stem. Cut florets off the head of broccoli, but don’t forget about the stalks! They can be cut lengthwise and into half-moons and prepared as well. Broccoli can be stored in cold, moist conditions for around 10 to 14 days or frozen.
