IMG_4401You may hear your mother’s voice when thinking about this veggie saying, “Eat your broccoli!” -but she’s right! This vegetable from the Brassica family is full of nutrients and goodness! Broccoli contains beta-carotene, vitamin C, calcium, potassium, iron, and phytonutrients that have significant anti-cancer effects. Broccoli has also been shown to help prevent digestion problems including stomach ulcers and stomach cancer.

When choosing Broccoli, look for sturdy, dark green spears, no yellowing and a high ratio of florets to stem. Cut florets off the head of broccoli, but don’t forget about the stalks! They can be cut lengthwise and into half-moons and prepared as well. Broccoli can be stored in cold, moist conditions for around 10 to 14 days or frozen.
